The correct name is "Bergkaese" and is specialty from the alps. The flavor can be mild to strong depending from the age.
"Bergkaese" is a hard cheese aged 6 month and more. Often up to several years and its in our opinion one of the best cheeses you can find.
We try to do the cheese in same tradition as in the German alps. Our wheel has about 15kg is our biggest wheel so far and a real cheese for cheese lovers.
